Action games include FP shooters and fighting games. fast paced stuff requiring fast reflexes like halo or mortal kombat
Action/Adventure is a mixture of two genres but it holds its own. it includes things like stealth games ((metal gear or splinter cell)) and survival horror ((resident evil or alone in the dark)) as well as other games like sly cooper, prince of persia, etc.
Adventure games are pretty simple and stress-free. requiring little to now reflexes as you meander through the story. usually text adventures or visual novels fit into this category
Sim games involve a simulation of some kind beit driving, flying, or just plain living ((GTA or The Sims))
RPG is a fairly broad genre. highly story based and includes games like Final Fantasy and WoW
